I learned of this spice in ancient Tibet
now part of China and known as Sichuan,
With a tickle of lemon and quick flash of flush
of this spice I am sure you will be fond.
‘Tis a citrus, and not a pepper
though you round-eyes call is so,
it will spice-up meaty umami
and help cayenne put on a great show.
